1 8-oz pkgcream cheeseat room temperature

Instructions
In a pie plate, mix together graham cracker crumbs and sugar. Add the butter, and mix well. Press up the sides and on the bottom of pie plate and set aside.
Preheat oven to 350 degrees F. In a mixing bowl, beat cream cheese and sugar until well mixed. Add eggs one at a time, mixing well after each addition. Beat in vanilla. Pour into prepared crust. Bake in preheated oven for 15 to 18 minutes, until center is almost set. Cool on a wire rack.
Next, make the strawberry topping. Mix together cold water and cornstarch until there are no lumps. Heat on medium heat until it bubbles and thickens. Add the strawberries, stir well, and then pour over cheesecake filling. Refrigerate pie for at least 2 hours, until ready to serve.
