On the morning of birthdays in this house, we celebrate right away with Birthday Cake Pancakes. They’re a great way to help the birthday person feel extra special!
As with most pancake recipes, you start by mixing together the dry ingredients (minus the sprinkles) in one bowl and the wet ingredients in another. Then, add the wet ingredients to the dry ingredients and stir just until combined.
Now you can add the sprinkles! These are what make the pancakes extra special for birthdays.
Cook the pancakes on a hot griddle or pan. Using a 1/4-cup scoop, you should get about 12 pancakes. I like to spread out the batter a little so the pancakes aren’t as thick. If you’re a fan of “gooey” pancakes, don’t do this step.
Top with frosting and more sprinkles to finish it off! Don’t forget to add a candle and sing “Happy Birthday,” too 😉
Birthday Cake Pancakes
Ingredients
Dry ingredients
- 1 1/2 cups flour
- 1 cup cake mix from a boxed mix, or another cup of flour minus 2 TB, with 2 TB sugar added in
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/3 cup rainbow sprinkles
Wet ingredients
- 2 eggs
- 1 1/2 cups buttermilk
- 1/2 cup milk
- 2 tablespoons melted butter or vegetable oil
- 1 teaspoon vanilla extract
Instructions
- Heat griddle or pan over medium heat.
- Combine all of the dry ingredients except for sprinkles together in a bowl.
- In a separate bowl, combine all of the wet ingredients.
- Add the wet ingredients to the dry ingredients and stir just until combined. The batter may be somewhat lumpy. Add the sprinkles and lightly stir to distribute.
- Scoop 1/4 to 1/3 cup of batter into a circle on the griddle, spreading out slightly. Flip the pancake when bubbles appear. Cook another minute or two until done.
- Keep pancakes warm on a baking sheet in a low oven, or serve immediately. Refrigerate or freeze any leftovers.
Optional frosting
- For an extra treat, mix together powdered sugar with some milk to a pouring consistency (about 1 1/2 cups powdered sugar with a tablespoon of milk added at a time). Serve with pancakes.
