It’s February already! Supposedly the groundhog did not see his shadow, so we are in for an early spring. It’s spring-like here, today, with temperatures in the 50s and strong wind, but I know that other parts of the country are experiencing blizzards! I think I read somewhere that the groundhog’s predictions are only accurate about 35% of the time, so it’s good that I don’t rely on a rodent for weather forecasts 😉
Last week, we tried two new recipes. We liked both of them! The lemon chicken was a little on the sour side, and I added a little sugar to the sauce. I also didn’t deep fry the chicken, but pan fried the outsides crispy and then baked them in the oven until they were cooked through. The enchilada soup was also very good! It’s a little on the “spicy” side for my kids, but other than that, my husband and I liked it. And it was also so simple! I wasn’t able to get to sloppy joes (a request from my son), so I’ll make those this week.
I also received a number of turnips from some dear friends! I must say that I’ve not much experience cooking turnips… Do any of you have great turnip recipes to share?
