Hello again, everyone! I hope your week last week went well. It’s difficult when the weather is yucky to get excited about leaving the house and doing anything other than eating soup and snuggling under warm blankets, and we had a week just like that last week. Thankfully, the weather looks to be much warmer this week, without the hassle of snow and ice!
As far as our menu this week goes, I would like to try out the lemon chicken dish (from two weeks ago!) this week, so I hope that I can get to it! I may end up not breading the chicken and just making it with the sauce, depending on how much time I have. I also really want to try the chicken enchilada soup that I planned on last week, as the slow cooker aspect of it really appeals to me.

[…] Last week, we tried two new recipes. We liked both of them! The lemon chicken was a little on the sour side, and I added a little sugar to the sauce. I also didn’t deep fry the chicken, but pan fried the outsides crispy and then baked them in the oven until they were cooked through. The enchilada soup was also very good! It’s a little on the “spicy” side for my kids, but other than that, my husband and I liked it. And it was also so simple!
