Last week when I was at the grocery store, they had hams on a great discount (less that $0.70 a pound!), so I grabbed one and roasted it last week. I used some of the leftovers to make 1.5 dozen ham & cheese pockets (in a method similar to bierocks) to eat and some to put in the freezer for later. Needless to say, I didn’t totally stick to last week’s menu plan, but sometimes I get inspired by something at the grocery store. Deviating from the plan a little now and then keeps me from feeling restricted by it.
You may (or may not) have noticed that I didn’t get a new recipe up this week… I was trying to finish up a baby blanket for friends of ours who are expecting (and moving to Switzerland this month!!), and so I did not get to it. But I did finish the blanket 🙂 There will be a new recipe this week, though! I have a few recipes photographed, and I am going to block out some time this week to get a few recipes ready to share with you all.
I put several soups on the menu this week… We’ll see how it goes as the week progresses, but I am really craving soups right now even though the weather has slightly warmed up!
Dinners
Ham, Broccoli, & Potato Casserole (without the box, though– I have some whole potatoes to use up!), Blackberry Cornbread (new recipe to us)
Baked Orange Chicken (new recipe to us), rice
Vegetable Soup, muffins
Ham and Corn Chowder (new recipe to us– will make 1/2)
Beef & Green Chile Enchiladas
Black Bean Soup (recipe from a friend of mine!)
