Swedish Meatballs

I have to admit… I used to not be a fan of Swedish meatballs.  But, my husband was insistent that I find a recipe that I like, because they are one of his favorite meals.  I am happy to say that not only have I found a recipe that both he and I enjoy, but one that is also incredibly simple as well.  And, if you like to keep pre-cooked meatballs in the freezer (like me!), it comes together in less than 30 minutes.  Perfect for a weeknight meal!

Here is what you need…  Just 4 ingredients, plus some meatballs.

In a large saucepan, melt the butter.

Add flour and stir well.

Cook and stir until the sauce turns the color of coffee with cream.

Add the broth in small amounts, and be prepared for it to bubble up after the first few additions.

Stir well between additions to avoid lumps.

Keep adding broth and keep stirring…

After enough broth has been stirred in (I usually use about 1 1/2 cups), add meatballs and cook until meatballs are warmed through.

Remove the meatballs from the heat and stir in sour cream.

Serve immediately with hot, cooked egg noodles.

  • 1 1/2 to 2 cups beef broth
  • 1/4 cup sour cream
  • 2 to 3 dozen pre-cooked meatballs
  • hot cooked egg noodles
