Here’s another muffin recipe I think you’ll love… Peanut Butter & Chocolate Chip Muffins. The muffins themselves are slightly sweet & mildly peanut buttery, but the addition of chocolate & peanut butter chips take them over the top! They might not be the healthiest muffins you’ll find, but they are definitely among the tastiest.
Here’s what you need…
In a large mixing bowl, combine the flour, brown sugar, baking powder, and salt.
In another bowl, combine the melted butter and peanut butter. Mix this well.
Add the milk and mix some more. It might look a little odd at this point, but it will be okay!
Add the eggs and stir until well combined.
Pour the peanut butter mixture into the flour mixture and stir just until combined.
Add in the chocolate and peanut butter chips and stir just until mixed.
Fill muffin cups with batter. I use my “monster cookie scoop” (a.k.a. an ice cream scoop ;)), and fill them all the way to the top. If you want, sprinkle a few more chips on the top of the batter.
Bake until done, testing for doneness by inserting a toothpick near the center of a muffin. If it comes out clean, the muffins are done. If not, bake another minute or two and check again.
Peanut Butter & Chocolate Chip Muffins
Ingredients
- 2 1/4 cups all-purpose flour substitute up to 1 C whole wheat flour
- 2/3 cup packed brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 6 tablespoons butter melted
- 1/2 cup peanut butter
- 1 cup milk
- 2 eggs
- 1/2 cup chocolate chips
- 1/2 cup peanut butter chips
Instructions
- Preheat oven to 375 degrees F. Line a muffin tin with cupcake papers or spray lightly with cooking spray. Set aside.
- In a large mixing bowl, combine flour, brown sugar, baking powder, and salt. In another bowl, combine butter and peanut butter. Add milk and mix well. Add eggs and stir until well combined. Pour peanut butter mixture into flour mixture and stir just until combined. Add in chocolate and peanut butter chips and stir just until mixed.
- Fill muffin cups with batter. Bake in preheated 375 degree F oven for 18 to 20 minutes. Test for doneness by inserting a toothpick near the center of a muffin. If it comes out clean, the muffins are done. Cool, and store in an airtight container.
