I am feeling ambitious this week… I am going to do lots of baking and cooking. And since it’s a bit on the chillier side here, I feel like I can turn on the oven more! Plus, with a 4-day work week, I get to spend a little more time in the kitchen 🙂
The kids picked out small pie pumpkins this year for Halloween, so it’s time to put them to use for something other than decoration. I am going to make some pumpkin puree and freeze most of it. I love having a deep freezer!! I am going to roast the seeds, which I’ve done before. However, I have never let them sit overnight before roasting, so I’ll give it a shot and see if that makes a difference.

What’s on your menu plan this week?
That’s funny. I did the exact same thing, ran out of time and had to put the pumpkin seeds in the fridge overnight. I roasted them in the oven and didn’t really notice any difference.
