Sausage Rice is so simple to throw together. It is a one-skillet meal that comes together in about 30 minutes, so it is perfect for a quick weeknight meal. If you want the dish to come together even quicker, you can use quick cooking rice. It is easily customizable; you can add a little kick with some pepper flakes or just use a spicy sausage. Plus, if you can find sausage on sale (sometimes the rolls of sausage are less than $1/lb here!) it is also economical! At four ingredients and about 30 minutes to the table, you can’t lose!
Start by chopping up three stalks of celery.
Brown the sausage in a large skillet over medium heat. Drain off the fat.
Add rice, chicken broth, and celery to pan.
Cover, and bring it to a boil. Reduce heat to a simmer, and cook until the rice is done. Remove the lid if necessary to evaporate excess water.
If you are using quick cooking rice, you may need to leave the lid off the whole time to evaporate excess water. However, if you are using traditional rice, you may need to add a little water to the pan if it starts to look dry before the rice is cooked. I recommend adding water about a 1/4 cup at a time, so it does not get soggy.
