Banana Oat Bread

It never fails… No matter how much I try to carefully count out the number of bananas I think our family will consume before they turn super-ripe, I often end up with a few extra that ripen beyond what we like to eat.  I have two other banana recipes (another bread, and some muffins) that are sure to please!  However, when you feel like a bread with a little “extra”, the oats in this recipe fit the bill.  They make the bread chewy, and give it a texture that’s hearty while still tasting amazing.

In a mixing bowl, combine the sugar and butter.  Beat until light and fluffy.  Add the egg and vanilla, and stir until combined.

Mix in the bananas and water.  It gets a bit soupy at this point.

After it’s mixed up really well, add in the flours, oats, baking powder, salt, and baking soda.  Mix this all just until combined, finishing it off with hand-stirring. Quick breads (like this bread and muffins) become tough when stirred too much.

Pour the batter into a greased loaf pan.  If you like, sprinkle some raw sugar on top.  Bake in preheated oven for about 1 hour.

Remove the loaf from the pan and cool completely (well, mostly!) before slicing and serving.  I highly recommend serving this bread warm with a pat of butter!

Ingredients

  • 1/4 cup butter softened
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1/4 cup water
  • 3 medium ripe bananas
  • 1 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1 cup oats old-fashioned recommended
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda

Instructions

  • Preheat oven to 350 degrees F. 
  • In a mixing bowl, combine the sugar and butter.  Beat until fluffy.  Add the egg and vanilla; stir until combined.  Mix in the bananas and water.  After stirred, add in flours, oats, baking powder, salt, and baking soda.  Mix just until combined, finishing by hand-stirring. 
  • Pour into a greased loaf pan.  Bake in preheated oven for about 1 hour.  Remove from the pan and cool completely before slicing and serving.
