This week, I am preparing for my menu by taking a good look at what I have on hand before making a trip to the grocery store. Last week, I had planned to make Stuffed Shells… Well, it turns out that instead of the Italian sausage I thought I had, there were breakfast sausages in my freezer instead! Of course, I noticed this right before getting ready to put the shells together. So, I improvised and we had breakfast for dinner instead! Since Stuffed Shells are one of our favorites, it is being moved to this week, and Italian sausage is on my shopping list!
Also, we must have been really hungry this week, because we did not have enough leftovers to make a meal out of them. On top of that, we went to one amazing basketball game (Rock Chalk!!) and I was so tired from being an over-excited fan the whole game, that I did not feel like cooking. So, we splurged on some Chinese takeout instead. As they say, the best laid plans of mice and men often go awry.
I have a coupon for a free large pizza, so I will save that for a busy night this week. Plus, we get to have dinner at church one night (Mexican Lasagna, yum!) and dinner with my family another. It should be a fairly easy week!
