Last week, I roasted a whole chicken and turned it in to three meals. It worked out pretty well, although I was not counting on the family eating so much chicken for lunch the day after I roasted it! So, the quesadillas and soup were a little shy of the amount of chicken that I would have normally included. We did stray from the plan one night (instead of leftovers), as a pizza place was offering pizzas for $3.00 with your university ID. I was super-excited about that deal, so I had to take it! Not to mention, my son loves pizza with black olives 🙂
We have a lot of food on hand (which is a blessing!), and it’s time for it to be consumed. Thus, I hope to spend very little on groceries this week, just some fresh veggies! I realized that I have only really been posting the “main dish” with each meal. So, from now on I’ll try to be better about posting the sides I have in mind, too.

Simple Meat Lasagna, garlic bread, corn
Ravioli (from the freezer), Soft Breadsticks, green beans
Bierocks (I hope to make a big batch of these and throw a few in the freezer for quick lunches)
Lemon-Broccoli Rice with Chicken
Walnut, Cranberry & Blue Cheese Salad
Bacon Wrapped Shrimp with Sweet Chili Sauce, Crunchy Romaine Salad (recipes to come…)

How did you roast your chicken? I usually do mine in the crockpot but I would love to try roasting it!
Uncovered in the oven, at 375 degrees. I stuff it with some sliced onions, lemons, and garlic cloves, and coat the skin with a little canola oil and sprinkle with salt, pepper, and usually rosemary & thyme (fresh, if I have it!). I use a wireless meat thermometer to make sure that it’s cooked to the proper temperature before I take it out. Then, I let it sit for about 15 minutes before carving. I should do a post on it sometime 🙂

The pizza deal was at Domino’s. I think it may have ended on Sunday, but you could call to check! Medium 1-topping for $3 is hard to beat 🙂
