We tried this dish in early January, completely outside of tomato season.  My family was quite approving of this quick chicken dish.  I can only imagine just how much better it will taste in the summer, cooked on a grill!  Oh, summer… Seems like it’s just so far away.

Feta-Topped Chicken

Regardless, this is a flavorful dish that can be prepared and put on the table in less than 30 minutes, which is my kind of dish these days!  Add a side of hot couscous (which cooks in a mere 5 minutes!), and it’s a meal!  I can imagine that a nice lettuce or spinach salad would complement the chicken quite well, too.

Here is what you need…

The Lineup

Start by brushing the chicken with the dressing.  Then, sprinkle with the spices.

For easy cleanup, I like to line a baking sheet with a sheet of foil, and then spray it with a little cooking spray.

Place the chicken on the baking sheet, and broil for about 5 minutes.  Keep an eye on the chicken so that the edges don’t burn.

Turn the chicken, and broil for another 5 minutes.  If you have thicker pieces of chicken, you may need to broil it a few minutes longer (per side) just to make sure that it is cooked thoroughly.  Just to be safe, cut in to the thickest part to make sure it is no longer pink.

Next, top each piece with slices of tomato.  Use enough to cover the tops of the chicken.  Then, add some feta.

Return to the broiler for a few more minutes, just until the cheese starts to brown.  Serve right away!

1 lb boneless skinless chicken breasts, cut in to uniform thickness
2 to 3 tablespoons balsamic vinaigrette dressing
1 teaspoon Italian seasoning
freshly ground black pepper
2 Roma tomatoes, sliced
1/4 to 1/2 cup crumbled feta cheese

Adjust oven rack so that the pan will be about 4 inches from the broiler.  Set the oven to broil.  Brush each chicken breast with dressing, and sprinkle with seasoning.  Broil 5 minutes.  Turn the chicken over, and broil another 5 minutes.  Check thickest parts of chicken to make sure there are no more pink areas.  If there are, broil another few minutes.  Top each piece of chicken with tomato, and then feta.  Return to broil another 2 to 3 minutes, until cheese begins to turn a light golden brown.  Serve immediately.
