Another dip, you say? Absolutely! If you’re serving up some yummy guacamole, the perfect accompanying dip is homemade salsa! This is so simple to throw together, and can be adapted to your tastes. We love cilantro, so there’s a big handful in ours. Like it hot? Toss in another jalapeno. Have fun experimenting to make this recipe yours! After you’ve made your own salsa, it’s tough to go back to store-bought.
As I mentioned before, this recipe is perfect for experimentation. I like to taste it after it’s almost pulsed to perfection, and check the flavors. I also recommend that you start with one jalapeno (leave the seeds and the ribs for heat), and work your way up. Jalapenos can vary so much in their heat, that sometimes one can have the power of two! Definitely blend it up and taste it before adding another.
Serve it up at your next fiesta with some tortilla chips, and maybe some tacos, too!
Restaurant-Style Salsa

1 28-oz can whole peeled tomatoes, undrained
1 to 2 jalapenos
1/4 cup fresh cilantro
juice of 1/2 lime
2 cloves garlic
1/4 wedge of small red onion
1/4 teaspoon cumin
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
Roughly chop garlic, jalapeno, and onion. Put all ingredients in a food processor or blender. Pulse several times until well-chopped. Store in the refrigerator.
Makes about 4 1/2 cups.
