We love granola in this house. In pretty much every form possible. Plain ol’ granola for sprinkling on yogurt… Even in bars. This is an all-new way to enjoy granola for us: in bites! I made these No-Bake Granola Bites to be a healthy snack for my 2 1/2 year old (okay, okay… for me too!). My husband ate one and said, “I bet these would be good dipped in chocolate.” He was SO right!
Start by getting together all of your ingredients. You will need about 2 1/2 cups of dry ingredients. My suggestions are given below in the recipe, but the mixture we like is that of oats, bran, wheat germ, flax, sunflower seeds, and sesame seeds.
This recipe is so adaptable based on your food preferences. Experiment until you find the mix that’s just right for your tastes. If you don’t plan to dip them in chocolate, you could add some mini-chocolate chips to the mix for just a little chocolate flavor. I haven’t tried it, but think that would be delicious, too!
Mix together your dry ingredients with the honey and peanut butter. After that’s mixed well, let it chill in the refrigerator for about 1/2 hour. If you forget about it and it chills for longer, it will dry out a little too much and be harder to form into bite-sized pieces, so don’t forget!
You can make the bites as little or as big as you like. Make them smaller for your kids, or about ping-pong ball-sized for adults. They are perfect snacks (or even a quick breakfast) for people on the go.
If the health factor is not your utmost concern, I highly recommend dipping these in chocolate! You will be so glad you did.
