We were so excited to come home last week from our trip to the lake to find one of our hens had started laying eggs. Our fried egg sandwiches were delicious with fresh eggs! We have been getting about one egg a day more or less. Once the other two start laying, we should have plenty of fresh, healthy eggs. And our Spicy Green Beans with beans fresh from our garden were yummy, too. I’ve really enjoyed having fresh ingredients available right here on our acreage!
The next few weeks are going to be a whirlwind for me. I think I may have to keep it simple in the kitchen in order to get everything else accomplished 🙂

Three Cheese Marinara Pasta, rolls (from the freezer)
Ham & Cheese Pockets (made with this dough), roasted cauliflower
Macaroni & Cheese, peas
Rigatoni with Spicy Sausage-Tomato Sauce and Arugula, garlic bread
Potluck at our friends’ house (we are taking a Greek salad & pita chips!)

Pretzel Dogs (for the freezer; the kids do these for lunch sometimes if we run out of leftovers)
