Wow, is it starting to get hot here! And I can’t remember the last time we got a good rain. The garden is still surviving well with daily watering, and I’ve now made 5 jars or regular dill pickles and two jars of refrigerator veggie slaw (inspired by this recipe). (By the way, do you know of any good cucumber recipes other than pickles? :)) The green beans are also growing very well! I hope to have enough later in the week, as I’ve been promising my husband we would have Spicy Green Beans for dinner with fresh beans from our garden!
I didn’t get to making spaghetti last week, as we got invited to a friends’ house for dinner instead! So, it’s on the menu plan for this week. We will also be traveling to my hometown for a baby shower that some friends and I are throwing for a friend who I’ve known since 3rd grade 🙂 I’m excited to see everyone and share some of my baking!
Dinners
Spaghetti, breadsticks (from the freezer), lettuce salad
Slow Cooked Pot Roast, Fried Noodles, gravy
Spicy Green Beans, rice
Shrimp Lo Mein
Dinner on the road: PB&J for the kids, turkey sandwiches for the adults!
Dinner at family’s house (x2)

Frosted Zucchini Cake Brownies (with fresh-from-the-garden zucchini!)

Our favorite cucumber recipe:
Cucumber Avocado Salad
1-2 Cucumbers – Peeled or Unpeeled – Diced into bite sized chunks
1-2 Avocados – Peeled and Diced into bite sized chunks
1/2 Cup Black Beans (rinsed or from freezer as you have on hand)
1/4 Cup or more of Fine Diced Red Onion
1/4 Cup or more of Feta Cheese
2 Cups of Lettuce – Iceberg, Romaine – whatever you prefer or have on hand
Dress salad with 1-2 TB of Olive Oil mixed with 1 tsp or so of Balsamic Vinegar + a dash of garlic powder, salt and pepper
Whisk well, pour over salad mix and toss gently
