It’s official! I have been writing up weekly menu plans for a year now. This has been one of the best things I could do to manage my kitchen (and our money) more efficiently! I am definitely going to keep up with it through 2013.
I took last week off from menu planning and blogging, as we were only home for two meals. It was great to have a break, but I have to admit that I am ready to get back in the swing of things! We are eating a lot of things we have on hand. I am making the chicken & pasta dish with a can of cream of chicken soup that has been taking up space in my pantry for a number of months. I bought some fresh vegetables and rice at the store, and that’s about it.

What’s on your menu plan this week?
I plan 1 month at a time. A few highlights: cheesy quinoa bites, cilantro lime tilapia tacos, lemon chicken soup, crockpot pho, poblano chicken enchiladas and Navajo tacos.
Planning one month at a time is a great idea! I may try working up to two weeks at a time and go from there 🙂
