I had fun last week trying three new recipes! We really liked the salad and the casserole, but the chicken & rice was just so-so. I think the new recipes kept me sticking to my menu plan because I was looking forward to trying new things. I’m finally starting to get used to cooking in this kitchen. But, I definitely still need some more organization time (don’t we all?!) to get everything where I want it to be.
This week, we are having some Korean pork thanks to our friends who brought by some for us to try. I’ll serve it with rice and some stir-fried veggies. My husband expressed a hankering for fried rice, so that is on the menu too. During my night class, my husband will have a frozen pizza with the kids (which I am sure they will love!). I am also making some granola bites for snacks when I can find a few minutes!
